Oatmeal Bites for quick & easy nutritious breakfasts. We make the base and then experiment with our favourite flavours, a few of the best are listed below.
Ingredients:
BASE:
- 1 1/2 cup almond milk or alternative
- 1 egg
- 2 tsp Coconut oil or any other cooking oil
- 1 tsp vanilla extract
- 1/2 cup maple syrup
- 2 tbsp ground flasxseed
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 3 cups oats I used Gluten Free
Strawberry Almond (OPTIONAL FLAVOUR)
- 2 tbsp slivered almonds
- 1/4 cup sliced strawberries you can use fresh or dried-we like both
Carrot Cake (OPTIONAL FLAVOUR)
- 1/2 cup unsweetened applesauce
- 1/2 cup Shredded carrots
- 1/4 cup shredded coconut
- 1/4 tsp nutmeg
- 1/4 tsp allspice
Chocolate Chip (OPTIONAL FLAVOUR)
- 1/2 cup mini chocolate chips
Banana Chocolate Chip (OPTIONAL FLAVOUR)
- 1/2 cup mini chocolate chips
- 1/2 mushed banana
Instructions:

Preheat oven to 350 degrees Fahrenheit. I use a silicone mini muffin pan, if using metal please grease.

Mix the milk, egg, oil, maple syrup, vanilla flaxseed, baking powder, salt & cinnamon together in a large bowl until mixed well. Fold in the oats.

Choose your flavours and mix into the base.

Spoon mixture into muffin pan and press.

Bake for 20-25 minutes until the edges are brown and pull from the sides.
