Mini Banana Chocolate Chip Loaves

Banana Mini Loaf Recipe

1/2 cup butter
3/4 cup brown sugar
2 eggs
3 ripe bananas
2 cups flour (we used gluten free)
1 tsp baking soda
1/4 tsp salt
1 cup mini chocolate chips (optional) 

1. preheat oven to 350 degrees F.
2. in large bowl or stand mixer cream butter & sugar together
3. add bananas & eggs
4. in separate bowl mix flour, baking soda & salt together
5. slowly fold flour mixture into banana mixture
6. add chocolate chips and fold until just mixed (don't over mix)
7. pour mixture into 4 lightly greased mini loaf pans
8. bake for 45 minutes or until cooked through
9. you can store 3 mini loaves in a Meal Tub in the freezer for up to 3 months (but good luck making them last that long)
